Smoked Pico de Gallo (smoked relish)
Great on all kinds of meat.
 

2 onions
2 green bell peppers
2 red bell peppers
3 jalapeño peppers
10 plum (or “roma”) tomatoes
2 tbsp. chopped cilantro
¼ c. light corn syrup
1 tsp. salt

Cut onions, peppers, and 5 tomatoes into halves. Place onto a perforated steamer pan and put on the top shelf of your regular oven or smoker. Cook at 250 degrees for 1 hour.
Remove cooked vegetables and allow them to cool. Chop cooked vegetable and remaining (uncooked) tomatoes into ¼” pieces. Blend together vegetables, cilantro, corn syrup, and salt.
